It&#039;s Taste Buds Tuesday! OK, I just made that up on the fly, but if you&#039;re interested in simple and delicious (and if you like cabbage), this may be for you.<br /> <br /> I had maybe a third of a large head of cabbage already sliced up from making saurkraut. You could probably buy a bag or two of just cabbage and carrot slaw and it&#039;d be just as fine.<br /> <br /> Throw in a large saute pot (need a lid). I used dill-infused oil because I love the flavor it adds, but olive, coconut, or avocado all work fine. Throw in about 2 handfuls of shredded carrots, a handful of raisins, and about a half a diced apple. Bunch of salt and pepper, and about 3 slices of ham diced very small.<br /> <br /> Put the lid on, walk away. Stir a few times until it&#039;s tender, and it&#039;s a side dish eaten for days! We&#039;ve eaten it with chicken, meatloaf, and I&#039;m sure it&#039;d be good with a pork chop. I ate it straight for lunch today (and was hungry later because it wasn&#039;t enough protein; I should follow my own advice!) So I grabbed a leftover chicken thigh.<br /> <br /> A big part of healthy eating is cooking in large enough batches that you can eat whatever you made the next day, or within a few days. I definitely do not cook every night, other than making a salad. With practice, I have that down to a science. My salads are huge and have tons of variety. Nothing takes that much time!<br /> <br /> (As an aside, a health coach doesn&#039;t prescribe an eating plan, although we can certainly help you sort through your own preferences, knowledge, and skill in order to make a plan.
