🎃 Spiced Pumpkin Pecan Cobbler

Ingredients:
- For the Pumpkin Layer:
- 1/2 cup + 3 tbsp all-purpose flour
- 1/2 cup whole wheat pastry flour or additional all-purpose flour
- 2 tsp baking powder aluminum-free preferred
- 1/2 tsp kosher salt
- 2/3 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup pumpkin puree
- 1/4 cup + 1 tbsp milk room temperature
- 1/4 cup unsalted butter melted and cooled
- 2 tsp pure vanilla extract

- For the Topping:
- 1/2 cup granulated sugar
- 1/2 cup brown sugar light or dark
- 1/4 tsp ground cinnamon
- 1/3 cup pecans chopped
- 1 1/2 cups hot water

- Optional for Serving:
- Vanilla ice cream, heavy cream, or whipped cream

Instructions:
1. Preheat Oven:
Preheat the oven to 350F 175C. Lightly grease a 2-quart casserole dish or use a deep 8x8 or 9x9-inch pan.
2. Prepare Dry Ingredients:
In a medium bowl, sift together the all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, cinnamon, ginger, nutmeg, and cloves. Set aside.
3. Mix Wet Ingredients:
In another bowl, combine the pumpkin puree, milk, cooled melted butter, and vanilla extract. Stir until well blended.
4. Combine & Spread:
Gradually add the wet mixture to the dry ingredients, stirring until just combined dont overmix. The batter will be thick. Spread the batter evenly in the greased casserole dish. Place the dish on a rimmed baking sheet to catch any potential overflow.
5. Make the Topping:
In a small bowl, mix together the granulated sugar, brown sugar, and cinnamon. Add the chopped pecans and toss until well distributed.
6. Assemble Cobbler:
Evenly sprinkle the pecan-sugar mixture over the pumpkin batter. Gently pour the hot water over the entire surface, but do not stir.
7. Bake:
Bake in the preheated oven for about 40 minutes, or until the center is set and the top is golden and bubbling.
8. Cool & Serve:
Let the cobbler cool for at least 5 minutes before serving. For an extra treat, top with a scoop of vanilla ice cream, heavy cream, or whipped cream.
