I was blown away how amazing the new Queso Blanco Spicy Poblano tasted, so rich and pure, I made one delicious chicken quesadillas. Make sure and give this recipe a try for your next Gameday meal.

CHICKEN QUESADILLAS

Ingredients:
1 can Juanita’s Foods Queso Blanco Spicy Poblano
4 chicken thighs
Your favorite taco seasoning
1 red bell pepper, sliced
1 onion, sliced
4 large flour tortillas
Oil for cooking

Instructions:
1️⃣ Place the chicken thighs in a bowl and coat them with your favorite taco seasoning. Mix well.
2️⃣ Preheat a griddle or pan to high heat. Add the sliced bell peppers and onions, cooking until they are charred and tender, about 5-7 minutes. Set aside.
3️⃣ On the same hot griddle, cook the seasoned chicken thighs until fully cooked through. Once cooked, slice the chicken into strips.
4️⃣ While the chicken is cooking, warm the Queso Blanco Spicy Poblano on low heat until it’s smooth and creamy.
5️⃣ On a flour tortilla, spread a generous layer of the warmed Queso Blanco. Add a portion of the chicken, peppers, and onions. Drizzle more queso on top, then place another tortilla over the filling.
6️⃣ Heat a clean skillet or griddle over medium heat and lightly oil the surface. Cook each quesadilla until the tortilla is golden and crispy, and the cheese is melted.
