Ingredients:
1 lb (450g) ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 can (10 oz) red enchilada sauce
1 can (4 oz) diced green chiles
1 tsp ground cumin
1 tsp chili powder
1/2 tsp paprika
Salt and pepper to taste
8 small corn tortillas, cut into quarters
2 cups shredded Mexican cheese blend
1/2 cup sliced black olives (optional)
1/4 cup chopped fresh cilantro (optional, for garnish)
Sour cream and salsa, for serving

Instructions:
Cook the beef: Preheat your oven to 375°F (190°C). In a large skillet, cook the ground beef over medium heat until browned, breaking it up as it cooks, about 5-7 minutes. Drain any excess fat. Add the chopped onion and minced garlic to the skillet and cook for an additional 2-3 minutes until the onion is softened.

Season the beef: Stir in the ground cumin, chili powder, paprika, salt, and pepper. Add the diced green chiles and half of the enchilada sauce, stirring to combine. Let the mixture simmer for 2-3 minutes, then remove from heat.

Assemble the casserole: Lightly grease a 9x13-inch baking dish. Spread a thin layer of enchilada sauce (from the remaining half) on the bottom of the dish. Arrange a layer of tortilla quarters over the sauce. Spoon half of the beef mixture over the tortillas, then sprinkle with 1 cup of shredded cheese. Repeat the layers: tortillas, beef mixture, and the remaining cheese.

Bake: Pour the remaining enchilada sauce over the top of the casserole. Sprinkle with sliced black olives if using. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
